Since I spend a majority of my day sifting through the greatness of pinterest, I thought it was time I started using more of the recipes I find on there. Enter this recipe for crock pot fajitas. I was a little hesitant at first, but it seemed simple and looked delicious, so it was time to give it a go!
What You Need:
– 2lbs of Chicken Breast
– 1 Green Bell Pepper
– 1 Red Bell Pepper
– 1 Onion
– 2 Tsp of Chili Powder
– 1 Tsp of Ground Cumin
– 1/4 Tsp of Salt
– 1/2 Cup of Chicken Broth
Cut the bell peppers and onion in to thin slices. I cut the top off of the peppers, cut them in half, and then sliced them. With the onion, I cut the top and bottom off, cut it in half, and then sliced it.
Take your two pounds of chicken breasts and cut into small chunks. Cut off any visible fat.
In a separate bowl, mix the dry ingredients with the chicken broth. Throw the chicken, veggies, and broth mixture into the crock pot and cook on low for 6-7 hours or on high for 3-4.

You can add cheese, salsa, sour cream, guacamole, or anything you desire! It’s easy and yummy!
